The Hillier's experiment with contemporary viticuture, distilling and brewing practices, celebrating native botanicals within their family of products. Each variety is grown, crafted and bottled within the province of Harris River Estate, and encourages others to enjoy, understand and reflect on the rich terrior of Collie River Valley.

In 2019 HRE installed a still and have a small range of Australian botanical infused gins producing 200 litres of premium gin per batch.
